Chilli - Con - Carnie

Ingredients

1 white onion

3 garlic cloves

2 tbsp olive oil

400g red kidney beans

1tsp chilli powder

1tsp cocoa powder

500g beef mince

400g beef stock

400g (1 tin) chopped tomatoes 3 tbsp tomato purée

 Method

1) Start by cooking the minced beef on medium heat for about 5 mins or until it turns brown. Finely dice the onions and mince the garlic, either with a knife or in a garlic press. Add the onions and garlic to the mince and cook for another 3-4 mins.

2) Next, drain the red kidney beans. Add the chilli powder, cocoa powder, tomato purée, and chopped tomatoes to the mince mixture. Cook until most of the liquid from the tomatoes has reduced.

3) Finally, add the beef stock and cook for approximately 30 mins or until almost all the liquid has evaporated.

4) To cook the rice I use 2 cups of water to 1 cup rice and cover and simmer for 10 minutes before checking on it. I then serve the chilli ontop of the rice with coriander to bring it to life.
