Jerk Chicken drumsticks
Ingredients
12 chicken drumsticks
2 white onions
1 red chilli
50g ginger paste
1/2tsp mixed spice (Jamaican pepper)
1tsp lime or lemon juice
1tsp ground black pepper
150ml soya sauce
150ml white wine vinegar
Method
1) Start by putting your onions, red chilli, ginger paste, mixed spice (Jamaican pepper), lime or lemon juice, black pepper, soya sauce and white wine vinegar into a food processor and blitz to form a jerk sauce.
2) To start making the chicken, place the chicken in a roasting tray, pour over the sauce, cover and leave to marinate in the fridge overnight. The next day start by taking out your chicken 30 minutes before cooking.
3) Next, warming up a hot frying pan and place on your marinated chicken wings. The sauce will charcoal in places that will be fine (In fact those are the most sticky delicious bits).
4) Allow around 30 minutes to fully cook through and then place your oven on the hottest temperature it goes to and cook for a further 10 minutes to get a nice crispy chicken.
