Steak Chow Mein
Ingredients
2 tbsp Dijon mustard
1 tsp sea salt
1 tsp ground black pepper
1 T-bone steak
1 nest per person of egg noodles
3 tbsp flavorless oil
100 g mixed frozen vegetables
1 tbsp dark soy sauce
2 tbsp light soy sauce
Method
1) Start by mixing your Dijon mustard, sea salt, and pepper before rubbing the mixture onto your steak and setting it aside at room temperature. After your steak is marinated, cook the egg noodles in a pan of boiling water for 4–5 minutes, then drain them.
2) Add your oil to your wok and heat it over high heat, ensuring the wok gets really hot and the oil is sizzling. While your wok is heating up, dry heat a frying pan over medium heat.
3) Once your wok is heated, mix in your frozen vegetables, light soy sauce, and dark soy sauce, then add in your egg noodles and mix to create your base chow mein, perfect for adding that steak.
4) In your frying pan, add your marinated steak and cook for 3–4 minutes on each side before adding the butter and basting the steak. Try not to touch the steak if you want the perfect crust.
5) Once cooked, allow it to rest for 5 minutes before cutting it on a slight angle and finishing by adding it on top of your chow mein noodles.
