Breakfast Muffins

Ingredients

300g self raising flour

1tsp baking powder

Pinch of salt

2tsp mixed spice

150g light brown sugar

250ml skimmed or full fat milk

2 eggs

100g margarine

100g mixed chopped nuts

100g rolled oats

125g blueberries

  Method

1) Start by preheating the oven to 180°C/Gas 4 and line a muffin tray with paper muffin cases. Melt your butter over a low heat in a saucepan or in the microwave in short bursts. In a bowl, mix together the flour, baking powder, sugar, salt and mixed spice and then stir in the sugar. 

2) In a another bowl, whisk together the milk, eggs and melted butter, then pour into the dry ingredients and quickly mix together. Stir in the mixed chopped nuts, blueberries and rolled oats. 

3) Divide the batter between the 12 muffin cases and sprinkle the top of each muffin with more rolled oats. Bake for 20-25 minutes, or until a skewer or cake tester inserted into the muffins comes out clean.
