Chilli tomato, sausage and black pudding pasta
Ingredients
150g spaghetti
150g cherry tomatoes
1 shallot
3 cloves garlic
3 generous slices of black pudding
4 pork sausages
Method
1) Start by bringing a pan of salted water to the boil before adding in your spaghetti. Allow to boil for around 5 to 7 minutes or until al dente or 2 minutes less than the packet says.
2) Next, dice your sausage meat and black pudding slices and pan fry for 5 minutes or until cooked and golden brown. The fat of the sausage and black pudding mean you need no oil.
3) Next, dice your shallot and garlic before adding to your sausage and black pudding pan with your tomatoes and allow the tomatoes to break down and soften and the onions and garlic to get a little colour. Once the tomatoes have softened and the onion and garlic have a little colour your pasta should be ready.
4) Drain your pasta water and save a mug full. Add the pasta to you tomato and sausage mix and a splash of the pasta water to loosen it up. Finish by adding your spices and cooking them through for 2 minutes before serving.
