Lemon chicken
Ingredients
2 chicken breasts
50g unsalted butter
2 lemon
1tsp sea salt
1tsp mixed dried herbs
1tsp ground black pepper
Method
1) Start by taking your chicken breast out the fridge 30 minutes before you want to start cooking to allow the meat to come to room temperature. Next, slice your chicken breasts in half so they are quicker to cook.
2) After you have 4 chicken breast out of 2, place your chicken between two sheets of baking paper (parchment paper) and bash them using a rolling pin to get surface area.
3) Next, mix your butter with the juice of one lemon, sea salt, black pepper and herbs. Melt this over a low heat before brushing over your chicken. Get a square of greaseproof and create a bag as we want to cook this chicken in the bag with the lemon.
4) Now your chicken in your greaseproof bag slice your lemon and lay over your chicken before baking in the oven for 15 to 18 minutes or until fully cooked through.
