Pigs In Blanket Traybake
Ingredients
6 Marris piper potatoes
4 carrots
4 red onions
12 chipolata sausages
12 streaky bacons
1 tsp salt
1 tsp Dijon mustard
1 tsp black pepper
150 ml vegetable stock
Method
1) Start by taking the skins off your potatoes and adding them into a pan of vegetable stock or salted water before boiling for 10 minutes or until fork tender.
2) Now your potatoes are boiled, preheat your oven to 180C/355F/Gas mark 4. Next, thinly slice your carrots and quarter your onions. Layer up your potatoes, carrots, and onions before mixing in your salt, pepper, and Dijon mustard.
3) Once you have your carrots, onions, and potatoes in your tray, wrap your bacon tightly around your sausages to make your pigs in blankets before nestling them in, seam side down.
4) To finish your tray bake, add your vegetable stock before baking for 30 minutes or until the pigs in blankets take on some colour and are cooked throughout.
