Roast Potatoes

Ingredients 

1kg Maris Piper potatoes

50ml olive oil

50g butter

3 sprig of thyme

 1 tsp salt

 1 tsp black pepper

Method 

1) Start by heating your roasting tray in the oven to 180°C / Gas 4. Meanwhile, peel your potatoes and cut into manageable chunks. Take your butter and olive oil and place these into your roasting tray.

2) While the butter and olive oil are heating up, place your potatoes in a pan of water and bring to a boil. Just as your potatoes are boiling, reduce the heat and allow to simmer for 5 minutes. Last but not least, place your potatoes on a kitchen towel and pat dry.

3) Once dry, place into a colander and shake to make them nice and fluffy. Now, remove the roasting tray from the oven to add the potatoes. They will sizzle for a bit, then top with ground black pepper, salt and thyme.

4) Roast for a further 30 minutes before shaking the tray to allow an even cook, then return to the oven for another 30 minutes or until golden and crispy.
