Soda bread

Ingredients

500g strong bread flour or plain flour

1 tsp baking soda

1 tsp sea salt (Cornish sea salt I use)

150g cheddar cheese

400ml buttermilk

Method

1) Preheat the oven to 200°C / 392°F / Gas mark 6. In a bowl, combine the flour, baking soda, cheddar cheese, and salt. Add the buttermilk and mix until a sticky dough forms.

2) Lightly flour a clean, flat, work surface and place the dough onto it. Gently roll and fold (do not knead) the dough a few times to bring the mixture together.

3) Next, use your hands and push them under the dough and turn to create a loaf shape. Make a deep cross in the dough, dividing it into quarters. Dust the bread with flour.

4) Place onto a baking tray lined with baking parchment and bake for 30 mins. The loaf should be golden brown.
