Sourdough toast with garlic tomatoes and basil
Ingredients
150g cherry tomatoes
4 slices of sourdough bread (You can use any other bread you want I prefer sourdough for flavour)
1 Garlic head
Handful of basil
Method
1) Start by preheating your oven to 135C/275F/ Gas Mark 1. Next, take your tomatoes and placing them on a baking tray with your head of garlic and drizzle in olive oil and sprinkle dried herbs. Cook slowly for 1 hour moving them around every 20 minutes.
2) Next take a grizzle pan and heat it up before taking your sourdough bread and drizzle with a little olive oil and placing onto the griddle pan to toast for 2 minutes on each side.
3) Squeeze out half the garlic, out of your tomato tray, into your tomatoes and mix to combine so you have garlicy tomatoes.
3) To finish use your other half of garlic to whip across your sourdough toast. Layer some mozzarella onto the sourdough before pilling on the tomatoes and some fresh basil, if you want an extra hit of flavour why not add some mint leaves.
