Apple Crumble
Ingredients
250g plain flour
175g unsalted butter
160g caster sugar
500g apples (Granny smiths are best)
50g light brown sugar
2 tbsp plain flour
2 tsp mixed spice
Method
1) Preheat the oven to 180°C / 360°F / Gas mark 4. Fill a large saucepan with water and bring to the boil. Start slicing and coring the apples. Place the apples into the boiling water for 10 mins until they become slightly softened. Drain the apples and pat dry with a paper towel.
2) Place the flour and caster sugar in a bowl and mix well. Cut the butter into small cubes. Take a few cubes of butter at a time and rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs and all the butter is incorporated.
3) Place the apples in a bowl and sprinkle with sugar, flour, and mixed spice. Stir well, being careful not to break up the fruit.
4) Butter a 8-inch rectangular tray. Spoon the apple mixture into the tray, then sprinkle the crumble mixture on top. Bake for 30–35 mins until the crumble is browned and the apples begin bubbling. Serve with ice cream or custard.
