Birthday Cake NYC Cookies
Ingredients
225 g butter
200 g light brown sugar
100 g fudge pieces
200 g plain flour
1 tsp baking powder
400 g white chocolate chips
200 g chocolate chips
100 g caramelised biscuits
200 g of chopped nuts
Method
1) Mix together your butter and sugar until they form nuggets of butter and sugar. There should be chunky and irregular. Do not overmix else your cookies won't be chunky and gooey like a NYC cookie.
2) Next, add in your egg, flour, baking powder and vanilla. You then want to mix this until you can no longer see any pockets of egg or flour. Do not overmix else your cookies will flatten in the oven.
3) Once you have half folded your cookie, take your chocolate chips and fold them through until fully incorporated. At this stage, you want to then roll your cookies into 125 g balls and then roll your balls in your chopped nuts and freeze for at least 4 hours ideally overnight.
4) Finally, place onto a lined baking tray and bake for 12 - 15 minutes or until golden brown. I like to enjoy warm with a scoop of ice cream.
