Chocolate chip cookies

Ingredients

150 g butter 

150 g light brown sugar 

1 egg 

200 g self raising flour 

175 g milk chocolate chips 

1 tsp vanilla

Method

1) Mix together your butter and sugar until combined, there is no need to cream else your cookies may spread out. You want it to form a light brown paste.

2) Next, fold in your egg and flour. You then want to mix this until you can no longer see any egg spots or flour pockets so it is fully incorporated. Do not overmix else your cookies may flatten when baked.

3) Once you have folded your flour and eggs, take your chocolate chips and fold them through until fully incorporated. At this stage, you want to then roll your cookies into 100 g balls and freeze for at least 2 hours ideally overnight.

4)   Finally, place onto a lined baking tray and bake for 15 - 18 minutes or until golden brown. Then, top with a chunk of chocolate out the oven. You could always dip yours in chocolate if you leave them to cool.
