Chocolate Fudge
Ingredients
400 g milk chocolate
397 g (one tin) Condensed milk
2 tsp cocoa powder
Method
1) Before we begin line an 8 inch square tin with greaseproof paper. Melt your chocolate over a Bain-Marie or in a microwave. There is no need to temper for this recipe, however you do not want to burn your chocolate, so still only do short burst of around 30 seconds in the microwave or 1 minute over the Bain-Marie.
2) Once your chocolate is melted, mix in your condensed milk and cocoa powder. This will go oily when you mix in your cocoa powder and condensed milk, however as it sets, it will smooth out to a silky smooth fudge.
3) Once you have completely mixed in your condensed milk and cocoa powder, place the mixture into your lined tin. It will be thick and so do your best to evenly smooth it out with a spatula or pallet knife.
4) You could add toppings at this point to give more texture to your fudge, such as sprinkles or sweets.
