Strawberry Muffins

Ingredients

110g margarine 

110g caster sugar

2 eggs

1tsp baking powder

150g fresh or frozen strawberries

Method

1) Start by, preheating your oven to 190C/370F/Gas 5 and line a 12-hole muffin tin with muffin cases. Next, mix the butter and sugar until light and fluffy the more volume and air you get in now the lighter and fluffier your muffins are going to be.

2) Slowly add in the eggs one at a time until fully incorporated. Next, fold through you flour and baking powder until combined you do not want any pockets of flour in your mixture.

3) Finally, chop your strawberries into quarters and then fold through be carefully not to overmix else they will bleed into the batter. Evenly distribute the muffin batter between the muffin cases and bake for 20 - 25 minutes or until golden brown.

4) An extra if you wish you could make a cream cheese frosting by mixing equal quantities of utter and cream cheese with double the amount of icing sugar, but there just as good as they are.
