Vanilla Sponge cake



Ingredients

250g margarine (Baking spread) or melted butter 

250g caster sugar

5  eggs

250g self raising flour

1tsp vanilla extract

Method

1) Before we begin this recipe preheat your oven to 180C/ Gas mark 4. Now you can grease your cake tin with butter and flour or a cake release spray. I also line mine with baking paper (parchment paper) as it is easier to get out from the tin.

2) To start the cake batter, begin by mixing your margarine or baking spread or melted butter with your sugar and mix together until they are full combined (If you are using melted butter our cake batter will be more runny)

3) Once your margarine is combined with your sugar crack in one egg at a time and mix to combine. If your cake batter splits add in a tablespoon of your flour and it will come back together.

4) Now your eggs are in fold through your flour and vanilla. Do not overmix else the gluten in the cake will turn your cakey chewy if activated.

5) Next split your cakes between your x4 8 inch lined cake tins and bake the cake for 25 to 30 minutes in your preheated oven. If you are doing them in x2 tins rather than 4 you will need to bake them for around 30 to 35 minutes.
