This easy almost leave alone fruit cake is perfect for that Christmas table centrepiece. Wrapped marzipan and royal icing this fruit cake is a real treat. You could even use the base fruit cake recipe for the perfect wedding cake flavour

500 g mixed fruit
zest of an orange and lemon
250 g margarine or softened butter
250 g light brown sugar
4 eggs
275 g self raising flour

Instructions

Preheat the oven to 140C/120C Fan/Gas 1 and grease and lining an 8 inch square cake tin and soak your mixed fruit in your alcohol or tea overnight. The next day start by whipping your butter and sugar until light and fluffy,
Next, add your eggs, flour, both zests, mixed spice and vanilla. Mix on a high speed, until all the ingredients are incorporated and the mixture comes together with no pockets of flour. This should take around 4 minutes.
Next, fold through your dried fruit, mixed peel and chocolate chips, ensure all these are evenly distributed throughout your mixture to ensure an even bake.
Finally, spoon your mixture into your prepared cake tin, this should come 3/4 of the way up your tin. Bake in the oven for 3 hour to 4 hours or until a cake tester or skewer inserted into the cake comes out clean. Leave for a few weeks feeding every few days.
When you are ready to ice, after a few weeks, roll out your marzipan to 3mm - 4mm thick you can go thicker if you wish. Then place it over the top of your fruit cake and use a sharp edge smoother around the top of the cake. Last but not least, pinch down the side edges together and cutting it with a knife. This will give you nice sharp edges.
Mix together one bag of 500g of squires kitchen royal icing according to the packet. Use a pallet knife to apply this and wiggle the pallet knife around to make a swirl effect. Finally, press the pallet knife down and bring it back up to create a spikey effect. Top with your Christmas toppers.
