A easy quick and simple Vanilla sponge cake that can be decorated and made into a birthday cake, carved cake or just a delicious eating cake. Whichever you want it will be delicious and full of flavour.

200 g margarine or melted unsalted butter (Using unsalted butter will result in your cake being firmer at room temperature)
200 g sugar (you can use granulated, icing or caster sugar)
4 eggs
200 g self raising flour (or plain flour with a 1tsp of baking powder)

Instructions

Preheat the oven to 170c / 350F/ gas mark 3 and grease and line 2 6 inch tins. Once your oven is preheated start by creaming the margarine and sugar together until light and fluffy. This should almost double in size. The longer you whip at this stage the lighter, fluffier your end sponge will be.
Next, mix in one egg at a time until all your eggs are full incorporated. If your mixture curdles, at any time, take one tablespoon of your flour and fold it through.
Next, add half your flour to your bowl and fold it through. Add the remaining half of your flour and your vanilla, remember to scrape the bottom of the bowl for any flour pockets that may be in the batter. Remember not to overmix the cake mix as you will activate your gluten in your cake.
Next, line and grease your cake tins. I use a cake release spray. I also, add a circle of parchment paper to the bottom of my tin. I then, pour my cake mix into my lined tin and spread it out so its level.
Bake in the oven for around 30-35 minutes or until a skewer comes out clean. Leave to cool in the tin for 15 minutes. If you take your cake out to soon it will shrink because of the temperature change. After 15 minutes, transfer to a cooling rack and allow to completely cool.
