Black Forest Cookies

Ingredients

200 g unsalted butter

200 g light brown sugar

150 g self raising flour 

60g cocoa powder

200 g milk chocolate chips

200 g glace cherries

2 whole eggs

 Method

1) Mix together your butter and sugar until they form nuggets of butter and sugar. There should be chunky irregular pieces of butter and sugar. Do not overmix else your cookies won't be chunky and gooey like a NYC cookie.

2) Next, fold in your egg, flour and milk chocolate. You want to fold this but not overmix as overmixing these cookies will make them flat. You want to make sure all the ingredients are full incorporated.

3) Once you have half folded your cookie, take your cherry jam and fold them through until fully incorporated. Do not overmix else you won't get your pockets of jam.

4) At this stage, you want to then roll your cookies into balls. Do not roll into tight balls you want them chunky and irregular. Freeze for 6 hours to give you that chunky cookie shape.

5) Finally, 15 minutes before you want to bake. When you want a cookie, Preheat your oven to 180C/ gas mark 3 / 350F. Place your cookies onto a lined baking tray and bake for 15 - 18 minutes or until golden brown. Leave to cool on the baking tray.
