Coffee and walnut loaf cake
Ingredients
175 g margarine
175 g caster sugar
3 eggs
275 g self raising flour
3 tbsp little pod coffee flavour
1 tbsp vanilla ( I use a little pod)
100 g walnuts
Method
1) Start, by preheating your oven to 180C/ 350 F/ gas mark 4 and line your loaf tin. Once your tin is lined, start whipping together your butter and sugar until light and fluffy, this will take around 5 minutes. You want to create lots of air as this is main process to give you a moist fluffy cake.
2) Next, add your eggs, flour, coffee flavouring, walnuts and vanilla. Mix all the ingredients until they are incorporated. Spoon the cake batter into your lined loaf tray and bake for 1 hour or until a cake tester or skewer comes out clean.
3) Once this has came out the oven, I mix up a batch of my buttercream and add 3 tbsp of coffee. I then, spread this over the top of the loaf (with a pallet knife) and finish with some chopped walnuts.
