French Toast
Ingredients
125ml whole milk
4 free-range eggs
1tbsp mixed spice
4 thick slices of slightly stale brioche
2 knobs unsalted butter (roughly 30g)
3tbsp Maple syrup (or as much as you wish)
Method
1) Whisk together the milk, mixed spice and eggs in a wide, shallow bowl. Dip the brioche slices into the mixture for 30 seconds each side, ensuring the liquid soaks into the brioche on both sides.
2) Heat a knob of butter in a large, non-stick frying pan over a medium heat. Once the butter melts, fry the brioche slices for two minutes on each side until golden brown. Remove from the pan and place onto a serving plate.
3) Whisk up a small amount of double cream, and get your favourite mixed berries. Drizzle with maple syrup over the top, and serve.
