Family size Sausage roll
Ingredients
20g unsalted butter
100g button mushrooms
handful of thyme
500g sausage meat
1tsp sea salt
1tsp ground black pepper
500g puff pastry
Method
1) Start by preheat the oven to 200°C/Gas 6. Next, melt the butter in a large frying pan and fry the mushrooms until soft. While your mushrooms are softening finely chop up your thyme using a knife.
2) Transfer to a bowl and add the thyme and sausage meat, salt and freshly ground black pepper. Mix until thoroughly combined.
3) Next, roll the puff pastry out into a large rectangle, then cut into two long rectangles. Place a layer of sausage meat mixture down the middle of each pastry rectangle, then brush with beaten egg on one of the long edge. Fold the other side of the pastry over onto the egg-washed edge. Press down to seal and trim any excess.
4) Chill in the fridge for 30 minutes to cool that puff pastry down. Place the sausage rolls onto a baking tray and bake for 20 - 30 minutes or until golden brown.
