Cheese and Thyme Scones

Ingredients

300 g self-raising flour

1 tbsp baking powder

80 g butter (not margarine)

4 tbsp caster sugar

150 ml milk

150 g of cheese (use the best quality you can find)

3 tbsp of thyme you can use fresh

Method

1) Add the butter (cubed) flour and sugar to a bowl and run in-between your fingers until they create a fine breadcrumb. If the butter starts melting place, place it in the fridge for 10 minutes and come back so that the butter firms up.

2) Next, add your milk, vanilla, thyme and cheese (leave a handful of cheese behind) and baking powder. Mix these in by cutting through the bread crumbs.

3) Take your dough and tip onto a floured work-surface (I use my non-stick green board) and roll out to roughly 3 - 4 cm deep take your circle cutters and dip in flour and cut out your scones (I use purple cupcakes circle cutters)

4) Place onto a lined baking tray and brush with a beaten egg or some milk and top with the left over cheese and bake for 10-12 minutes or until they have a nice golden touch and have a nice rise. I then cut mine and serve with butter.
