Jerk Chicken Drumsticks

Ingredients

8 chicken drumsticks 

2 white onions

1 red chilli

50g ginger paste

1/2tsp mixed spice (Jamaican pepper)

 1tsp lime or lemon juice

1tsp ground black pepper

150ml soy sauce

150ml white wine vinegar

Method

1) Start by putting the onions, red chilli, ginger paste, mixed spice (Jamaican pepper), lime or lemon juice, black pepper, soy sauce, and white wine vinegar into a food processor, and blitz to form a jerk marinade. 

2) Place the chicken in a roasting tray, pour over the sauce, cover, and leave to marinate in the fridge overnight. The next day, 30 minutes before cooking take your chicken out to come up to room temperature. Then warm up a frying pan and cook the marinated chicken drumsticks. The sauce will charcoal in places - that’s fine!

3) Allow around 30 mins to fully cook through and then place your oven on it’s hottest temperature and cook for a further 10 mins to get a nice crispy chicken.
